Chicken Drumsticks Wrapped in Bacon

Last night I went to the organic supermarket in our neighbourhood not knowing what we would have for dinner. I was quite undecided whether I would prefer meat or fish. I was late and so the choice of fresh fish was already limited so I took a look-around at the meat counter. Usually I always tend to look at the red meat but yesterday these beautiful chicken drumsticks caught my eye.

Instead of preparing a marinade, I wanted to give the chicken some flavour by stuffing some garlic and herbs under the skin. I also bought some bacon in order to give the chicken a more smoky flavour.

This would also be something to put on the barbecue. I think that the more garlic you use, the better it tastes – but this is also because I love garlic. I used different kinds of fresh herbs. See what you have at home/what is available and what goes well with the chicken. I used thyme, oregano and mint. Using mint with thyme and oregano is not a common combination but it gives the chicken a refreshing taste.

Don’t use the olive oil sparingly!!

We had mixed vegetables with the chicken: courgette, pepper and leek. A green salad would be perfect as well. The chicken was super yummy!! There is no real formula on how long to put it in the oven for. I think we put it for about 35 minutes until the skin and the bacon looked crispy and super good. Enjoy!

What you need for two hungry people:

  • 4 big chicken drumsticks
  • Fresh herbs – I used oregano, thyme and mint
  • A lot of garlic
  • 8 thin slices of smoked bacon
  • Quality olive oil
  • Pepper and salt
  • Steps:

  • Seperate the chicken skin from the meat without completely removing it
  • Prepare the filling: wash the herbs and cut into small pieces, peel the garlic and cut into slices
  • Stuff the garlic and herbs under the chicken skin
  • Use further garlic and herbs to plug into the rest of the chicken leg
  • Pre-heat oven to 180°
  • Wrap the drumsticks in thin slices of smoked bacon. Use two slices each
  • Drizzle a lot of olive oil over the chicken legs and season with salt and pepper
  • Put in the oven for 30-40 minutes until the chicken skin and bacon look crispy
  • Serve with lemon
