Green pizza with basil olive oil

Pizza! Italia! I am really looking forward to go to Italy at the end of August. And since it is only raining in Germany lately, I am creating Italy at home, by having an Aperol Sprizz, some antipasti and mediterranean dinners. Sicily it is now. We have booked the flights and I can’t wait to go.

It was on the news tonight that Mount Etna on Sicily, the biggest and most active vulcano in Europe, started erupting again this weekend. I saw our holiday in danger but I guess it will be fine.

I read a lot about Sicily this week and it all sounds very interesting. But I also have to say that I took a text marker and the lonelyplanet and I caught myself only marking the culinary highlights of the island. If you have any recommendations please let me know!

Tonight I made a pizza with various greens and a basil olive oil topping. Very delicious and the recipe is very suitable for variations, different veggies, toppings and so on. I mixed thyme with the basic dough which gives it the little extra. Make sure you manage to get a real thin pizza dough. Yummy!

What you need:

  • 200g wholemeal flour
  • A handful of fresh, minced thyme
  • 1 tablespoon dry yeast
  • Sea salt
  • Olive oil
  • 1 small courgette
  • 100g snow peas
  • 100g green beans
  • 50g grated Parmesan cheese
  • 150g ricotta cheese
  • 3 tablesppons milk
  • 1 handful fresh, minced basil
  • Ground pepper
  • Steps:

  • Combine flour, salt, yeast and thyme in a bowl. Add 1 tablespoon olive oil and 125ml warm water and knead until you get a smooth yeast dough
  • Cover the bowl with a kitchen towel and let the dough relax and rise for about one hour
  • Slice the courgette finely
  • Chop the green peas into small pieces and put them in boiling salt water for about 15 minutes until they are soft
  • Cut the snow peas into fine strips and blanch them in boiling salt water for one minute
  • Combine ricotta, milk and Parmesan cheese in a bowl and mix well
  • Roll out the dough on a working plate into a pizza-kind-of shape and place it on a baking tray
  • Spread the Ricotta-Parmesan-mix on the dough, add pepper and salt
  • Top the pizza with the greens and put into the preheated oven on 180°C for 15 minutes
  • In the meantime chop the basil, mix it with some olive oil and sea salt
  • When the pizza is ready, take it out of the oven and drizzle the basil olive oil all over
