I discovered a new kind of tart which is suitable for both a sweet fruit or a savoury vegetable filling: Galette. The filling is wrapped in a simple and delicious golden crust. We had fresh spinach in our vegetable box this week which I combined with onions for the filling.

I like the rustic look of the Galette and it makes a perfect weekend lunch.

I like these kind of recipes that you can vary according to what vegetables you have at home or which are in season. Uncomplicated.

What you need:

For the crust:

  • 180g spelt flour
  • 100g butter
  • A pinch of salt
  • 2 tablespoons ice cold water

  • For the filling:

  • 200g fresh spinach, washed and stems removed
  • 2 small onions, finely chopped
  • 1 garlic clove, finely chopped
  • 80 g creme fraîche
  • 1 teaspoon oregano
  • Freshly ground pepper
  • A pinch of fine grain sea salt
  • Olive oil

  • Steps:

  • Combine flour, butter and salt in a bowl and add some ice cold water as you knead the ingrendients. See how much you need to form a smooth dough
  • Place the dough ball in the fridge for about one hour
  • Put the fresh spinach into boiling water for only about 5 minutes
  • Let the spinach drain well
  • Preheat the oven to 180°C
  • Roll out the dough on a working plate into a round shape – you don’t have to make an accurate shape giving the Galette a rustic look
  • Spread the creme fraîche and then arrange onions, garlic and spinach on top, leaving out a border
  • Season with oregano, pepper and salt and drizzle with some olive oil
  • Fold all edges over the filling step by step
  • Put in the oven for about 30 minutes until the crust is golden-brown
  • Allow the Galette to cool down a little bit before you cut it
