I see cupcakes everywhere lately. Blogs, magazines…is this the second height of cupcakes? I don’t know but it made me want to make a batch today. A batch of sweet sweet lemon cupcakes.
I used a classic recipe for lemon cake and experimented a little bit for the topping.
I love lemon zest. I love the smell of lemon zest. It is so fresh and intense and I find it quite fascinating how a little bit of lemon zest can give a large amount of cake mixture such a great flavour.
For using lemon zest as the decoration of the cupcakes I suggest you use a zester. I don’t have one so my lemon zest is not very fine. However this is good for the cake mixture as you can really taste the lemon in the cake, which I really like.
