Miner’s lettuce and new potato salad with a Honey & Mustard Dressing

I quickly wanted to share this new discovery: Do you know Miner’s lettuce? It is also called Indian lettuce or Spring Beauty.

It is a wild green plant and a perfect salad green that seems to be forgotten. It was in our vegetable box, but I have never seen it on a farmers market or in a store before. The leaves are succulent and the taste is similar to raw spinach but very mild and more crunchy. I really like it.

Together with new potatoes and beetroot I made a refreshing salad. The honey and mustard dressing gives the salad a sweet touch.

What you need for two people:

  • 400g new potatoes
  • 200g beetroot
  • 100g miner’s lettuce
  • A handful roasted pine nuts

  • For the honey & mustard dressing:

  • 4 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons water
  • 2 teaspoons Dijon mustard
  • 1 tablespoon honey
  • Pepper and salt

  • Steps:

  • Wash the potatoes and then Cut them into halves, don’t remove the skin
  • Peel the beetroot and cut it into chunky pieces
  • Wash the miner’s lettuce and remove the end of the stems
  • Cook the potatoes in salt water until they are tender (about ten minutes)
  • Arrange potatoes and vegetables on a plate, add pinenuts and drizzle with the dressing
