A braided yeast bread is a German Easter classic! It is a slightly sweet bread, which tastes best with butter and homemade jam.

The recipe can be varied by using raisins, dried fruits or nuts. I also really like the raisin version. The perfect thing to bring for an Easter breakfast or brunch.

German braided yeast bread dough

What you need:

  • 500g wheat flour
  • 250g whipped cream
  • 100g sugar
  • 1 tablespoon dry yeast
  • Vanilla extract from one vanilla bean
  • 3 eggs
  • A pinch of salt
  • 1 egg yolk to brush the bread with

  • Steps:

  • Preheat oven to 180°C
  • Combine all ingredients in a bowl and beat until you have a smooth dough
  • Then knead the dough with your hands
  • Form a dough ball and let it rest at a warm place for about 2 hours
  • Knead the dough and then divide it into three sausage-shaped pieces
  • Braide the dough and then brush it with the egg yolk
  • Put into the oven for about 30 minutes until the bread is golden brown

    1. That looks really interesting and delicious. It’s a radically different version of challah (no cream and no vanilla) but looks exactly the same. I’m tempted to make it for guests to see the looks on their faces.
